I treat many overweight women and I am also Chinese. I was raised eating a "traditional" chinese diet and agree that the mainstay of every meal was steamed white rice, lots of stir fried vegtables, and about 4 oz of meat per person, used mostly thin cut into strips and used to season the rest. One factor you left out is that traditionally, traditionally there was not a lot of snacking in between meals, and if they do it is nuts or fruit, not pre-processed, highly concentrated sources of carbs or fat. And desserts were for special occaisions and by and large, they were not very good. Most desserts were made from rice, red or black beans and sugar. You didn't want firsts much less seconds. Just my 2 cents.
